Records retention

Requirement★ Critical itemRef. FSSAI-FSE-REC-002

FSSAI marks this item with an asterisk on its inspection checklist — failing this one item alone results in non-compliance for the whole inspection.

In plain language

Records need to be retained for at least a year, or the shelf-life of the product if longer -- the FoSCoS checklist flags this as one of the items that can fail a whole inspection on its own.

Official text

“All records with regard to processing, maintenance, cleaning, insect/rodent control shall be retained for a period of one year or the shelf-life of the product, whichever is more.”
